Which one is more common, 'How much is this pair of shoes'? Or 'how much are these shoes'? And when we answer the first question, can we say 'It's 67 dollars'? Thank you!

Yes, How much are these shoes, is correct. You want to know about something specifically, and replying you may say it's 67 dollars. I would reply "They meaning the shoes are 67 dollars" or specify the shoes if someone asks about different things at once like: How much are these shoes, shampoo and dress? I would reply the shoes are 37 dollars, shampoo is 2 dollars and the dress is 100 dollars.

I personally say the latter "how much are these shoes?" and I think it's a lot more common for people to ask this way (given that you're either pointing to or holding the shoes) The response is perfect :)
