Sorry is an adverb. " I am sorry ".

    Apologize is a verb, " I apologize "

    (The noun is "apology".)

they all mean the same - just different "parts of speech" (noun, verb, adjective)

("I'm sorry" is more colloquial than "I apologize" - same meaning).

Well. I think, when you did something wrong, you can say Sorry, but no one say Apologize.
Sorry is more colloquial, Apologize is a noun. I guess. I am not sure.

which is the difference between "sorry" and "apologize"? Is correct use both?

    Answer:
Aside from the fact that sorry is an adverb and apologize is a verb,
'apologize' is more a more formal way of saying 'sorry'.
