I'm looking for phrases in Greek to use when your thinking of what to say. To give you more time.
In English if I was thinking or pausing I could say;
"Well"
"you see"
"the thing is"
"you know"
I was wondering if there are any useful "pause for time" words in Greek

There are "pause for time" words and phrases in greek as well!!The ones you asked for are the most common actually!
"Well"= Λοιπόν... (le-pon)
"the thing is"= Το θέμα είναι ότι...(to the-ma e-ne oti...)
"you know"=Ξέρεις...(kseris)
