Can people tell Hanzi from Mandarin Taiwanese and Cantonese apart? Both Mandarin Taiwanese and Cantonese are written  through Traditional Hanzi.

Are there any major differences between traditional Hanzi
 used in Mandarin Taiwanese and those used in Cantonese?

The traditional Hanzi (characters) are the same, but we use different expressions, just like American English and British English, e.g. truck vs lorry.

Cantonese using some words that not using  in Mandarin. For example, Cantonese use 嘅 instead of 的 which mean 's in English. Another example is Cantonese use 邊度 instead of 哪裡 which mean where in English.
