The New Practical Chinese Reader is fairly solid as a fundamental course and includes additional workbooks alongside the main textbooks. Great Wall Chinese also isn't bad, but it is much less intensive. Maybe you are already familiar with these books? 

I'd stay away and have your student stay away from Teach Yourself and Living Language. They are very touristy and lack a strong foundation. The publisher Tuttle has a massive amount of Asian language books, but I've found most of them to be mediocre or better used as secondary sources. 

What books are you using for French, Japanese, and Korean? (I am interested in all three of them.)
