This cake remains me of cherry blossoms on a rainy day. Japanese people including me are obsessed with seasons. The cherry blossoms season is such a short amount of time. It’s from the end of March to beginning of April. Many people go for a picnic, hiking and have a party under the cherry blossoms. I think our ancestors started to preserve that , it could be enjoy more traditionally . We call it Mizu Shingenmochi. It’s made from Agar -Agar. Which’s like a jelly. And substance made from algae. So unlike gelatin,it’s vegetarian. Agar itself no flavor. So pour your favorite syrup on the top.
