what’ s meaning of "in matter"? We may define chemistry as the science in which we deal with the chemical change in matter as a result of which it is possible to form a new substance. I don't understand the "in matter" in the sentence,does it mean "a kind of thing"?

Yes, it does. It means that chemistry is trying to understand how a substance (matter) can change from one type to another - "the chemical change in matter". Matter being, as Bree said, "a physical substance".
