How do you like your eggs in your country? Do you prefer them sunny-side up? Or maybe hard-boiled?
In Japan, we have a very special way of eating them: we pour a raw egg directly over a bowl of hot rice. We call this "TKG"—short for Tamago Kake Gohan.
Whenever I tell my students about this, many of them are shocked. They ask, “Wait, you eat raw eggs?! Won’t you get a stomachache?” It’s a natural reaction if you aren't used to it!
But don't worry—there's a reason why it's safe and why we love it so much. Today, I’m going to take a deep dive into the world of TKG and share the secrets behind Japan’s favorite soul food.
