Do we use 'the German' to mean German people in general? For example, The French like to go to the bar just like the German. (I made this up.) Should I say 'the German' or 'the Germans' here? :)

In this case you want to use "Germans" (plural).

It would be “Germans” the only reason we say “the”before French is because the word French cannot be plural on its own (frenchs/frenches) the same situation with The Japanese or The Spanish And of course it’s more common to just add “people” (ex: Japanese people)
