The Chinese New Year is my favorite festival. People in different areas of China may have different ways to celebrate the Chinese New Year. For example, people in the north and the south have different conventions regarding food.
It's fascinating how Chinese New Year celebrations can vary so much from one region to another, especially the food traditions between the northern and southern parts of China. What are some of your favorite dishes or customs?

This is not too bad however there might be a better / easier way of expressing this. Also "convention" may not be the right vocabulary for the differences depending on the meaning.
Chinese New year is my favourite festival. People in different areas in China celebrate this festival differently. For example people in the north have a different cuisine compared to people in the south.
Northerners celebrate a bit differently to southerners and the traditional foods differ...
You could also specify a bit more to clarify the explanations.
People in the north tend to eat spicier food during Chinese New year compared to the south.
