Or you could say, "I like Finland more than most other countries."

Neither of these is correct, as "favourite" is a superlative, so one thing cannot be more favourite than the other (i.e. you cannot use the word in degrees). A gramatically correct way to say this would be: "I like very few countries as much as I like Finland".
