This is from playing cards. You over-play the cards in your hand when you have weak cards, but play like you have stronger cards. The cards you have is your hand. Stan was in a weak position with the FBI, and tried the wrong tactics which failed. Now, he’s got to deal with the result of the that.

To overplay one's hand means you have an advantage, but you try to use it too much so you might end up losing.
