How much bread do you have?
'Bread' is an uncountable noun. 'Much' is used with uncountable nouns. 'Many' is used with countable nouns.
You can say:
How many loaves of bread do you have?
'Loaf' is countable. 'Loaves' is the plural form.

In the singular we would say a piece of bread of a loaf of bread. So it is possible to ask: How many pieces of bread or How many loaves of bread.
But generally we ask how much bread?
