High, in this case, refers to the euphoric state induced by saccharine peak occurs in human body after large amount of sugar ingestion. After you"high", or all the sugar in the blood is consumed, you "crash". Crash refers to the despondent mood after substances intoxication.
...In short, high means the exciting state after one eats sugar. Crash is the opposite of High, occurs after "high".
