when should we use singular and plural noun for the word 'noodle'?
I just know most of the time we use noodles to describe a dish of noodles.

The only time you use noodle rather than noodles is if you really only mean 1 noodle. This noodle is uncooked (the rest are cooked). You will almost never hear people say noodle.

But, Kelvin, there is also an idiom - To use your noodle - which means to use your brain or to think about something sensibly.
