'or rather' vs 'or, more precisely'
We all went in Jack's car, or rather his father's.
Is it also correct to say "We all went in Jack's car, or, more precisely, his father's."?

Yes, you can say both. You could also say "or, more specifically".
I would use "or rather" in regular conversation.
