Cómo se dice "I love ice cream"? Quiero helado?
Tengo problemas con "querer". Lo uses por todas cosas que quieres? O use "amo"?

Simply "querer" means "want" :)
"love" is "amar" , BUT if you use it for talking about a person, it could mean "querer" too. Equally this last "querer" just is used with people and when you feel a sentiment about her/her, NOT about things.
So, "I love ice cram" in spanish would be translated to "(Yo) amo el helado"

Its very easy , when you refer to a person it's about love, when you refer to an object it is about you wanting it.You can also use "quiero" with animals. "Quiero a mi perro" I love my dog. "Quiero a mi perro" I want my dog. It will depend on the conversation for example if you don' have a dog then you want it.

I love ice cream = Me encanta el helado (not just want one, you want to make public that you like it very very much)
I want ice cream = Quiero un helado (Desire, asking it at restaurant as desert)
