Adversity is the subject of the sentence. Therefore, 'Adversity is the difficulties people meet in life', is the correct sentence. In this sentence 'the difficulties' is the direct object of the sentence and does not affect the verb.

The 2nd sentence. Because dificulties is plural, therefore it is "are" not "is"
