"macabre"--horrible and associated with death
"maniacal"--insane, crazy, perhaps violent
It is as if the animals had been killed by a crazy person who thought that killing animals was funny.

It means that the speaker felt that the scenes of slaughter that he witnessed were so surreal and unbelievable, and so incredibly cruel that it seemed like a terrible person playing a horrible joke.
