Is it also correct to write "Nella tua famiglia quanti personi ci sono"? If yes, what's the difference between them?

No it's not correct. The word Persona can refer to men and women but the word itself, grammatically speaking, is feminine.
So it's always: Una/La Persona - Alcune/Le Persone
Ex.
Paolo è una persona meravigliosa.
I miei genitori sono due persone molto generose.
