Today is the 8th of February or today IT is the 8th of February? What sentence is correct? Thank you in advance!

You don't need the 'it' because you already have a subject. 'Today' is your subject. 'It' is a pronoun that you use when you don't have a subject, and it would be incorrect to put it in this sentence.
