Writing "Charles' " is correct. The name "Charles" ends with an S, so you don't need to add an apostrophe and an S, just an apostrophe.
You should pronounce it like: Char-l-z-is

As far as the spelling, there's actually some debate about that. A lot of modern style guides say that you should write it "Charles's".
