Crime and Crimes, please explain when can we use it in plural.

Just as with all countable nouns, use the singular when you mean one. Use the plural when you mean more than one.

You do the crime, you do the time. The prisoner was charged with crimes against humanity. He committed a crime. He committed numerous crimes. The soldiers were accused of committing war crimes. Crime is a countable noun so crimes can be used when there is more than one.
