Why is sleeping used instead of sleep in "I like sleeping in the afternoon."

They are both nouns, but the gerund, “sleeping” refers to the action of the verb, and implies that you are the one who sleeps (in the afternoon). The noun, “sleep”, is more general, so it doesn’t really make sense in this sentence. The infinitive, “to sleep”, could be used and would have practically the same meaning as the gerund. (The gerund sounds a bit more factual than the infinitive, which may sound just a bit theoretical in some contexts.)

You can use either of these forms: 1. like + sleeping 2.like + to + sleep
They are both correct only difference is, when you use the first, you're talking about having fun sleeping in the afternoon, and the second, when you do that like a habit.

It's a matter of preference; both are correct.
While either form works, you can use the the other form to add variety.
I love cooking. I especially love to cook Indian food.
I love to cook. I especially love cooking Indian food.
He likes swimming. He likes to swim in the lake.
He likes to swim. He likes swimming in the lake.
HOWEVER, the word ENJOY can only be used with a gerund, so be careful!
I enjoy running. √ Correct.
I enjoy to run. X WRONG!!!
