Japanese Mushroom Words
In English, we say "Shitake mushroom." In Japanese, could I say "椎茸キノコ," or is this redundant? I heard that 茸 can mean mushroom as well, but I just don't understand how best to use these words. Can someone please explain?

"Kinoko" is mushroom in general. Shitake mushroom is "椎茸".

Just to let you know about the case of "えのき茸", you more often even omit the latter part of the word "茸" and say "えのき", which literally just means a tree they probably live on.
