To miss something means absence of something that you had an opportunity to acquire it while lack refers to absolutely not have something.

Can you give an example?
Lack is to be without something
"This salad lacks dressing for example"
miss can be used many ways but in this case
"I miss salad dressing"
means you are still without salad dressing but implies that you want some
