Should I say "nice to meet you" or "it's nice to meet you"? Which phrase is more correct?

Both are perfect. If you say the "it's" it is more "proper". We normally don't say it...it gets lost when we speak because of the speed. Both are grammatically correct though.

You can say both. No one is going to say anything, but it pays to know that, "nice to meet you" isn't grammatically correct. "It's nice to meet you" is a complete sentence. Go with that.
