Which one is more common? Although, Even though, Even if? Or are they different?

Hey! This is a really good question. 'Although' and 'Even though' are similar but I would say 'Although' can be used to mean 'despite' and 'however' while 'even though' is usually only synonymous with 'despite'. 'Even if' is used for unreal/hypothetical reasons or to express that something goes beyond. For example:
'I like to eat Italian food even though (despite the fact that) it is very different from my usual cuisine'.
'I like to eat Italian food although (however) I do recognise it is very different from my usual cuisine'
'I like to eat Italian food even if it is very different from my usual cuisine' (beyond the fact that/irrelevant of)

"Although" and "even though" have the same meaning which is "in spite of the fact that" and "even if" means "despite of the possibility"
