Today, I'm going to take the Italian language test at university. I have been learning Italian for about two years, but I don't speak Italian much. I will do speaking test today and grammar test will be done on Thursday. So I have to study a lot of Italian language this week! I'll do my best.

Today, I'm going to take an Italian language test at university. I have been learning Italian for about two years, but I don't speak Italian much. I will do a speaking test today (an oral test today) and a grammar test on Thursday. So I have to study a lot of Italian this week! I'll do my best.
Much better to use "oral test" rather than "speaking test."
