热炒(stir-fry): why don't we hear more about it? There are many stir-fry(热炒) restaurants in Taiwan, and it's great. But when people talk about Taiwanese food I never hear it mentioned. Why is this?

At my hometown  we mostly call it 煸炒 instead of 热炒.Honestly, the same thing has different names in different places:)

I think it's because it's more of a style of restaurant than a type of food.  Most dishes offered at 熱炒店 can be found in regular Chinese restaurants; it's the atmosphere (cheap, fast, rowdy, opened late, 台啤 bottles everywhere, etc.) that makes 熱炒店 special.

I think it's hard for people who don't understand Chinese order food there. They need local people's help. But as a Taiwanese, I always bring visiting friends to 熱炒. The table is totally like our daily dinner meals when we were young and it's very Taiwanese!
