Could you explain the red part to me with some other secens or examples, thank you beforehand

Monica: You guys, I am not that bad!
Phoebe: Yeah, you are, Monica. Remember when I lived with you? You were like, a little, you know, Ree! Ree! Ree! Ree!
Monica: That is so unfair!
Ross: Oh come on ! When we were kids, yours was the only Raggedy Ann doll that wasn't raggedy!
Monica: Ok, so I'm responsible, I'm organised. But hey, I can be a kook.

(Does that mean Monica's raggedy Ann doll wasn't raggedy at all. Or does it mean something else? I just don't get  the organization of the sentence as a Chinese...)

(Joey try to get Angela, his ex-girlfriend back by hooking Monica with Bob, Angela's now-boyfriend. He lied to Monica Bob which he had never met before was Angela's brother to get her here in the restaurant)

Monica: :(to a waiter) Thank you.

(to Joey) So what's this Bob guy look like? Is he tall? Short?
Joey: Yep.
Monica: Which?
Joey: Which what?
Monica: You've never met Bob, have you?
Joey: No, but he's...
Monica: Oh my God, Joey, for all we know this guy could be horribly...
(Angela and Bob walk in. Bob is good-looking.)
Angela: Hey, Joey.
Monica: ...horribly attractive. I'll be shutting up now.

(I can get "I'm shutting up now" which means" I am about to shut up" and " I'll shut up". I just, however, fail to get the sentence mixing them together.)

Ross: (hangs up) Well, Monica's not coming, it's just gonna be me and Rachel. (Chuckles)
Chandler: Huh. Well, hold on there campy, you sure you've thought this thing through ?
Ross: It's laundry. The thinking through is pretty minimal.
Chandler: See, it's just you and Rachel, just the two of you? This is a date. You're going on a date.

Raggedy Ann is the name of a classic doll, but the word "raggedy" by itself means "material in poor condition." The joke is that her Raggedy Ann doll was not in poor condition at all, in other words, Monica is too neat, proper, and unadventurous.
 
"I'll be shutting up now" emphasizes that she will be in the process of shutting up, but she may not actually complete that action.
