Agustín
What’s the best way to say this saying?: Horse’s start, and donkey’s stop. When one starts a project or a resolution at full speed with great expectations, but eventually stops abruptly because to have lost their initial determination.

Hi Agustín. How are you? Happy New Year. I know 'consistency vs intensity' but it's not exactly what you are looking for. By the way, I love that saying. I hope you don't mind me telling you this, but I don't see 'because to have lost...' I know what you mean but I don't think that's correct. 'Because of the loss of their initial...' or 'because they have lots their...' All the best, Oscar

I am a native English speaker, and I don’t know this expression. Maybe it is more popular in another country or among a different generation? In any case, I would just use the phrasal verb “give up”.
