It’s sunny today. Back home, Mom surprised me with a brand new soup – authentic
Cantonese pear soup! From what I could see, it was filled with juicy pears,
crystal sugar(I guess), plump jujubes, and almonds. There was also a mysterious
spice that seemed like cinnamon, or even tree bark? The secret ingredient,
though, seemed to be simmer time. Mom left the whole pot bubbling on the stove
after boiling for hours. ( Maybe it’s best to turn this around to make it clearer - After boiling (the liquid), Mum left the (whole) pot bubbling on the stove for hours.) By the end, half the water had evaporated leaving the liquid transformed into a
concentrated, flavorful essence. Every spoonful was a delight! We definitely
need to make this soup again soon.
