"Make noise" can be used in a negative command, such as "don't make any noise!" if you do not want to disturb someone. The "noise" in this phrase can refer to anything that is audible: footsteps, leaves crunching, talking, etc. "If you want to sneak up on someone, don't make noise." "Make noises" is different. It's used to announce or describe a specific instance of noises that are usually nondescript and otherwise difficult to describe. "I was hungry, so my stomach made noises." Noise can be a countable and uncountable noun. You are making too much noise. My car is making strange noises.
