Hi dear native English speakers. Could you please tell me how would you call this stuff on top of one's head (such a hair style detail) speaking of human beings? especially, in Am English. thank you in advance.

I agree with most of the other answers. Here are examples in a sentence; "His hair is spiked." "He has put hair gel into the spiked hairstyle he has." "It's unusual to see a spiked buzz cut on a medical professional. " A "Buzz" hair cut is when the hair is so short it can stand straight up.

Typically we would refer to this style as a Mohawk hairstyle. This is a form of punk hairstyle and several types exist to include liberty spikes, caterpillar Mohawks, etc. I hope this helps out.
