In normal conversation it is more common and easier to say "will not be able stand the cold'. In all honesty, "withstand" would be better but we don't say it in everyday conversation.

“stand the cold” would probably be the most natural way to say it. So, “I would like to go to a country where I can see snow, but I don’t think I would be able to stand the cold”
