It was the lovely holidays! Is it correct to say so?

No. I don't think so because saing " the lovely..." Is like you are talking about a unique thing( like: "My best friend"). So I think you could say " It was lovely holidays" or if you want to exalt even more your statement you can say " It was the "loviest" holidays?
