‘ she will be 21 years old next year ‘ would you say like this ? Does it sound unnatural ?

It is correct. Another (shorter) way to say it is to take out "years old" since it's understood that you mean age.

It would probably sound more natural if just say “She will be 21 next year.” The “years old” part is usually understood since you’re talking about age at a specific point in time in the future.
