You can simply say: "to sharpen a pencil".

Twist is the verb you are looking for. Hold the plastic bit steady and twist the pencil while pushing it into the sharpener.

"I am sharpening my pencil." You use the present continuous tense because you are busy with the action.
"I sharpen my pencil every day." Here you use the present tense. It's an action that you do every day.
The verb form ( full infinitive) is: to sharpen
V1: sharpen V2 (past): sharpened V3( past particicple) : sharpened
Example of V3: I have just sharpened my pencil. ( present perfect tense)
