Hi there! Can I say "Why don’t we go fishing off my boat this weekend?" meaning / I have a boat so let's go fishing this weekend, take my boat to the destination and do fishing in the sea/lake, not from a bank or bridge etc,. Thanks!

That's basically okay, though ON my boat would be more natural. OFF my boat sounds like maybe you're going onto the boat, and fishing from there without moving the boat. But it's a pretty fine distinction. You could probably use either ON or OFF.
