I don’t understand this sentence : “no me moleste al niño”
To me it’s reads “don’t bother me at the child”
How would you translate this? Why not use con?

It means: don’t bother my boy.
In this case using “con” completely changes the meaning of the sentence.

Hola, Caleb. In this case there is the regionalism of using the pronoun “me” when we are talking about another person (el niño), because the boy is considered someone close to the person talking, could be their kid. Without using “me” the sentence would be: No moleste al niño. (Don´t bother the boy). But with “me” it might be understood as: don´t bother my boy.
If we use “con”, making the sentence: “no me moleste CON el niño”; it means something like: don´t bother me with the boy. As in don´t interrupt what I´m doing to give me the responsibility to see or care for the boy.

If we are strictly it means: Don't bother the child..... The subject is implicit "tu (You)"... In spanish we can put the subject or not... "Tu no me molestes al niño". When we say "al niño" it can be our child or someone child....if we want to refer to our child the sentence will be: No me moleste a mi niño.... In some latinamerican countries or regions the prepositions can change but is because his dialect, but if you want to speak properly, the rules doesn't change

Esa es una típica frase usada en algunas regiones de Colombia, aunque imagino que también en otros países de Latinoamérica.
The meaning is "do not bother my boy or my kid"
For example, a mother could say that to other kid because he is bothering her kid in the school.
in this case the preposición "con" does not work.

Por ejemplo: el niño duerme. Tu puedes decir "no moleste al niño". Es decir, no quieres que otra persona pueda despertar al niño.
Si usas "con" la frase sería: "no me moleste con el niño". Es decir, no quieres que nadie te moleste a ti.
