I am learning the 了。。。就 structure and would like some advice on these sentances.

1. 昨天下午我上了楼（因为健身房在二楼）就健身，健了身就吃午饭。(Could I also say 我上楼了就 ...)

2. 今早起了床就走路。出去前我想起来下雨，那拿了伞就走路。

The first sentence is good. For the second one you may also say

今早我拿了伞就出门，出去前发现下雨了(or出去前想起来今天会下雨)，于是拿了伞才出门。

走路 just mean walk, but I guess you want to express go out  here and you can use 出门。

拿了伞才出门 means you have to take an umbrella before go out.
