Simplified Chinese and Traditional Chinese
So, which one is the most used? Hypothetically, if I start learning Chinese, which one should I pick up?

Depends on why you are learning Chinese. With whom would you like to communicate? Simplified characters are the standard in mainland China and also used in Singapore and Malaysia, while traditional characters are used in Taiwan, Hongkong and Macau. Once you learn one variant, it’s not difficult to learn the other as well.
