If you want to encourage a friend who is too shy to practice their Cantonese speaking how would I say," Dont say that, you can do it! just try little by little."

Let me make it easier for you. I would say
"m4 si3 m4 zi1"
Literally, it means "not try not know".
That means you don't know if you don't try.
This is a common way to encourage people to try something new. e.g. opening a new business, trying a new hobby, or even picking up a girl etc.

You can something like...
"唔係丫,唔好咁講,試下就得架喇,慢慢黎"
Meaning: "I don't think you're bad. Not say that. Just try it and you'll be just fine. Take it slow."

唔好咁講,你也可以做到既,慢慢嚟。
(I literally translate into Cantonese from your sentence)
This colloquial sentence is too horny.
I would say this in a humble way: 你讲得几好啊。唔使惊。我都唔识你哋既广东话,大家慢慢嚟。
(Translation: Your English spoken was so good, don't be shy(scary), I don't know Cantonese either, We can speak slowly.)
I joined a discord server which was very amazing for me. if you are interested you can join it in one day . because the link is valid for one days. https://discord.gg/2ewHj2
