When you enter the italki Classroom, you will see a Recording Authorization Switch in the upper-right hand corner. The default for this switch is "On". If you do not want to allow the lesson to be recorded, turn the switch to "Off".

I don’t think there’s an option for that as yet, I stand to be corrected.
