Hola. Ya has dicho el sujeto, "the culture of Mexico", así que no tienes que utilizar un pronombre (it). "Is so interesting" - es tan interesante, o "is very interesting" - es muy..." Siempre "depend ON". "His" - su, de un persona. "Its" - su, de una cosa. La gente es, sí, es singular, pero en inglés, "people" is plural, entonces la conjugación del verbo sería "are".
