When should I use "Ton" and "Ta"? Is it if you are a male or female? Or is it the gender of the object that decides which is right?

Yes. The gender is dependent on the object,
Est-ce que tu as ton manteau? (Do you have your coat?)
Où est ta sœur? (Where is your sister?)

the main element of a phrase is a noun> so the concord is made depending on what kind of gender the noun is...
