Your teacher is an idiot. Type "Niki" into Google and you will see how many people there are in the world who use this spelling.

There are several ways of spelling this name, and "Niki" is one perfectly acceptable way. As well as Nikky, you can have Nikki, Nicky, Nicki, Nicci and even Niqui or Nicqui.
