El sentido puede ser mas o menos lo mismo, con una matiz diferente.
En el caso del verbo "stregare", ese verbo viene de la palabra "strega" (bruja), entonces enfatiza mas la componente irracional de una atracion que sentimos hacia otra persona, como si estuvieramos bajo el efecto de un hechizo. Por esto - como dijo bien Andrew - puede tambien tener un sentido negativo.
Creo que existan los verbos "hechizar" y "embrujar" en espanol, pero no estoy seguro sobre sus sentido y la posible correspondencia con el verbo italiano "stregare".
"Affascinare" (o en la forma pasiva "essere affascinati") tiene el sentido de sentir una atracion por las calidades (fisicas, intelectuales..) de otra persona. Calidades que determinan la fascinacion, el poder encantador que alguien puede ejercitar sobre nosotros. El verbo correspondiente en espanol seria "fascinar" o "encantar".
Como puedes notar, la diferencia entre los dos es minima y depende del contexto y del nivel retorico que quieres utilizar.

The idea is the same: someone attracts you very much.
"Mi hai stregata" expresses that the attraction you feel is strong as if the other person was a witch/wizard who put a spell on you. While "Sono affascinata da te" expresses that there is something in a person that attracts you very much, it could be just beauty, intelligence, irony, movements, kindness...
The general idea is that the attraction is strong and you feel as if you were the victim of a spell...in a positive way of course.

If said with a positive meaning, they are quite the same.
The first sentence could also be used with a negative meaning,
like blaming somebody for not correct behaviour (meaning: you put a spell on me),
but this negative reproachful context would not allow the second sentence to be said.
All in all, IF there is a difference, it would be quite huge and expressed by the context.

If you say ''mi hai stregata'',, other sentence is ''sono affascinatO da te'' because is a man that is speaking. Anyway, both sentences indicate a situation when a man is more attracted by a woman, it happens that a man saw this woman and his feeling is very good.
But ''mi hai stregata'' is a meaning more strong than ''affascinato''
