Only "쉬는 날" is. 2. "My rest days are every Tuesday and Wednesday" => 쉬는 날은 화요일하고 수요일이에요. (in colloquial style) => 화요일하고[화요일이랑] 수요일(에) 쉬어요. You can say 화, 수요일마다 (난) 쉬어요 too. but 수요일 already implies 수요일마다. In Korean it is more natural not to say the subject(난) if it is obvious from context. In a casual conversation, it'd be even shorter, like "화, 수(에) 쉬어" (I'm off Tuesdays and Wednesday).
